Steps to make 虎皮蛋红烧肉

  • 1.鹌鹑蛋煮熟剥皮,五花肉切块,百叶结洗净,第一步把鹌鹑蛋放锅里煎。
  • 2.必须盖锅盖煎,会崩油,煎好一面摇一下锅子让它翻面煎。
  • 3.煎出虎皮。
  • 4.锅内剩余的油煎五花肉块(我不喜欢焯水~你们有这个习惯的先焯水再煎肉吧)。
  • 5.五花肉和鹌鹑蛋一起放入砂锅中,加4勺糖。
  • 6.两勺糖,两勺清水熬糖色,熬成琥珀色就可以。
  • 7.糖色变成琥珀色的瞬间,加入一大碗开水。
  • 8.热糖水加入砂锅,加黄酒和盐,再加几滴酿造白醋,这样肉质肉质软烂。
  • 9.小火煮半个小时,快出锅前五分钟放入百叶结就可以。
  • 10.出锅啦~
