Details of ingredients

  • 猪里脊肉400克
  • 香菜1根
  • 胡萝卜1/3根
  • 鸡精1/4小勺
  • 蛋清1个
  • 加饭酒1勺
  • 玉米淀粉3勺
  • 白糖1大勺
  • 生抽1勺
  • 香醋1大勺
  • 淀粉1小勺

Steps to make 锅包肉

  • 1.准备材料。里脊肉切成0.3厘米左右的大片,加入盐 1小勺 鸡精 1/4小勺 蛋清 半个 加饭酒 1勺 腌制20分钟。
  • 2.将玉米淀粉 3勺 清水 适量 蛋清 半个 色拉油 几滴搅拌成液态流状。
  • 3.腌制好的里脊肉片均匀的拍上一层薄薄的干淀粉。放入混合好的面糊中裹上。
  • 4.锅里油烧至7成热,中火。
  • 5.炸大约3分钟,捞出。
  • 6.锅中的油再烧热后,放入肉片复炸至颜色变成金黄色。捞出。
  • 7.盐 1/4小勺 鸡粉 1/4小勺 加饭酒 1大勺 白糖 1大勺 生抽 1勺 香醋 1大勺 淀粉 1小勺调成汁备用。
  • 8.葱姜蒜切末,胡萝卜切细丝,香菜切小段。
  • 9.留少许底油,放入葱姜蒜末炒出味
  • 10.放入胡萝卜丝翻炒,再放入炸好的里脊肉翻炒
  • 11.迅速倒入调好的汁和香菜,拌匀即可。
