馋了好久了,一直想自己做萨其马,每天都想着他的美味,今天在家终于下了决心

  • 玉米淀粉适量(防粘用)
  • 白芝麻30克(炒熟的)
  • 白糖160克
  • 麦芽糖100克
  • 35克

Steps to make 萨其马

  • 1.面粉和泡打粉混合过筛,在案板上做成一个面粉坑
  • 2.将鸡蛋打散,倒入面粉坑里
  • 3.揉匀,成为湿润的面团,根据实际情况加入少许水,使面团达到非常粘软的程度(可以用玉米淀粉防粘)将面团静置松弛15分钟
  • 4.利用这个时间把芝麻炒熟
  • 5.案板上撒少许玉米淀粉,将静置好的面团擀开成约0.2CM厚的大面片
  • 6.将大面片裁成若干小面片。再将小面片切成如图所示的细条(俗称坯条)。切的时候注意撒上一些玉米淀粉,以防止切好的坯条粘在一起。
  • 7.锅里倒入色拉油烧热至油温150℃左右
  • 8.将坯条放入筛网,筛去多余的玉米淀粉
  • 9.分次投入油锅里炸成浅金黄色
  • 10.炸好的坯条
  • 11.开始煮糖浆。细砂糖、水、麦芽糖倒入锅里
  • 12.用小火加热,直到细砂糖溶解,糖浆出现浓密泡沫,继续用小火熬煮,将糖浆煮到115℃。如果没有糖浆温度计,用筷子蘸少许糖浆,如果糖浆能扯出细线,就说明熬好了。
  • 13.糖浆熬好以后关火,把炸好的坯条、炒熟的白芝麻放入糖浆里,趁热快速拌匀,尽量使每一根坯条都蘸到糖浆。趁温热的时候,倒进涂了油的不沾平底锅中。手上抹油以后,直接用手掌把坯条压实(要趁温热的时候操作,凉了以后就硬了)。
  • 14.等沙琪玛完全冷却,黏合在一起以后,脱模并切成小块就行了
