家乡手工鱼丸做法详解
印象中老家的鱼丸最好吃,能吃出鲜鱼味道,又Q又弹又滑又嫩。自从来广东后,见到鱼丸总想买来尝尝,却总也尝不出那种鲜美的味道,失望至极…… 让我好几年都不再买鱼丸吃了。这次爸爸来了,终于抓住机会,让他好好给做了一次真正的鱼丸,嘿嘿,咱得认真记录下来,以备日后复习呢。

    Steps to make 家乡手工鱼丸做法详解

    • 1.准备鱼适量,洗净,去皮。(我这条鱼很大,所以只取鱼尾部分)
    • 2.放入清水中漂15分钟,漂出血色,让鱼肉更白更嫩。
    • 3.用刀顺着鱼骨刮下鱼肉。
    • 4.加入小半碗葱姜水与鱼肉一起放入搅拌机搅拌成鱼蓉。
    • 5.已经搅拌的很细滑了。
    • 6.倒入较大的盆中,加入适量红薯粉和盐搅拌均匀。
    • 7.使劲搅打上劲。
    • 8.这个步骤很重要也很累人的,手会酸的要命。有电动打蛋器可以用电动的。(直到取一团滴入清水碗中,能立刻浮起来为好)
    • 9.大锅中注入清水加热至微微起泡。
    • 10.用左手抓一把鱼泥,从虎口处挤出,右手用汤勺沾水,挖出小丸子,迅速下入水中。
    • 11.待鱼丸全部浮起时,捞出。
    • 12.捞出的鱼丸放入冷水中过凉,然后沥干水份食用或冷藏。
