圣诞小饼干
小饼干是圣诞节孩子们最喜欢的小礼物,我信马由缰的试着做了一款。一向拒绝色素的诱惑,便自己调配了几种颜色,确实不尽如人意,还好小孩子们特别喜欢,就应个景吧!

Steps to make 圣诞小饼干

  • 1.备齐各种材料;
  • 2.没有糖粉,取砂糖用料理机达成糖粉;
  • 3.饼干制作:软化黄油加入60g糖粉,用打蛋器的打蛋头搅拌一下,让糖粉和黄油混合一起,这样搅打过程中,糖粉不会到处乱飞,电动打蛋器先开低速打,待糖粉和黄油混合后,开中速搅打,搅拌至体积变大,颜色发白(此过程大约需要2-3分钟左右);
  • 4.鸡蛋打散,留出14g蛋白,剩余搅拌均匀;
  • 5.分3次加入蛋液, 每加一次都要搅拌到蛋液完全与黄油融合(不可一次性的加入蛋液,以免不小心就会引起油水分离),直到搅打至顺滑,蛋液与黄油完全融合;
  • 6.一次性的筛入低筋面粉,用刮刀翻拌,或用手抓匀、揉成团;
  • 7.可以再放在案板上再将面团反复揉几次,10下以内即可,用保鲜膜包好,冷藏至少1小时,我直接放在外阳台冷冻10分钟;
  • 8.拿出冷藏好成型的饼干面团,案板上放上一张油纸,将面团放在油纸上,面上再盖一层保鲜膜;
  • 9.擀成3mm--5mm左右厚;
  • 10.面皮做成喜欢的各种图案,没有现成工具,可以试着用食品包装盒剪出图案再制作;
  • 11.做好的饼干面皮直接连油纸一起移入烤盘;
  • 12.烤箱提前预热180度10分钟,烤盘置放入烤箱,上下火,中层180度8-12分钟(或见饼干均已上色即可);
  • 13.烤好的饼干。
  • 14.巧克力装饰:白巧克力隔水花开;
  • 15.装入裱花袋,按照自己的想象装饰饼干。
  • 16.糖霜制作:将蛋白放入无油无水的容器中,加入几滴柠檬汁(或者白醋),打发至粗泡。将糖粉分三次筛入蛋白中,每次都用打蛋器将糖粉和蛋白搅拌均匀;
  • 17.将调好的蛋白糖霜分成4份,留1份白色,其他3种分别加入色素,调出自己喜欢的颜色;
  • 18.我用了绿茶调出绿色,用蛋黄调出黄色,用樱桃汁调出粉色,不过颜色都不艳丽,勉强能用。分别装入裱花袋;
  • 19.图画各种喜爱的图案;
  • 20.信马由缰画出来滴。
