牡丹虾球

Steps to make 牡丹虾球

  • 1.鲜虾6个、日本豆腐2个、粉丝1把、葱末10克、蒜末15克、剁椒1茶匙、蒸鱼豉油2茶匙、白糖1/3茶匙、料酒1/2茶匙、白胡椒粉少许、淀粉少许。
  • 2.鲜虾去头去壳(留虾尾),从后背刨开,把虾尾从中间穿过,稍稍整理成虾球。
  • 3.处理好的虾球,加入少许白胡椒粉、1/2茶匙料酒、少许淀粉抓匀。稍稍有些粘就好。
  • 4.粉丝用温水泡软备用。(粉丝泡几分钟变软就可以,浸泡时间太长会失去筋道爽滑的口感)
  • 5.泡好的粉丝放入深一些的盘中备用。
  • 6.现在处理玉子豆腐,玉子豆腐取出,每个一分为三,切成6小段
  • 7.把玉子豆腐的切面朝上,依次切好十字花刀,底部留1/3不要切断。(豆腐两边垫根筷子,切起来非常方便,不用担心掌握不好力度)
  • 8.切好的豆腐用刀托起。(不要用手去拿,用刀托起,不破不散)
  • 9.如图,依次码放在粉丝上,腌渍好的虾球放在豆腐之间的空隙中。
  • 10.锅中放底油,小火把葱末、蒜末、剁椒炒出香味,放入生抽、白糖拌匀关火。
  • 11.炒好的料汁浇在虾球上。
  • 12.放入蒸锅,上汽后蒸约六七分钟即可关火。
  • 13.取出,撒些香葱末提色增香
  • 14.成品!虾鲜豆腐嫩,简单却又赏心悦目,再加上爽滑的粉丝,浓郁的酱汁,想不爱都难~
