麻婆豆腐
喜欢吃麻婆豆腐,但又吃不了太辣,不管是不是正宗,好吃就可以啦。

  • 辣豆瓣酱1汤匙
  • 酱油1汤匙
  • 1茶匙
  • 麻油1茶匙

Steps to make 麻婆豆腐

  • 1.准备材料
  • 2.在锅中加入油,烧热后放入花椒榨油,至出香味且花椒颜色变深,关火。
  • 3.将花椒油沥出,花椒备用。
  • 4.在肉末中加入一汤匙花椒油和小半汤匙生粉,搅拌均匀。
  • 5.将豆腐切块。
  • 6.水烧开后加入盐和豆腐,水再次沸腾后小火煨豆腐。
  • 7.葱,蒜切末。
  • 8.炒锅中加入一汤匙花椒油,爆香葱,蒜,放入肉末翻炒,不宜过熟。
  • 9.加入辣豆瓣和酱油翻炒均匀。
  • 10.加入高汤和糖。
  • 11.放入煨过的豆腐。
  • 12.并花椒一同煮5分钟左右,捞出花椒。
  • 13.将剩下的生粉溶于一小碗水中,倒入豆腐中勾芡。
  • 14.将豆腐转入砂锅中,小火。淋上麻油和剩下的花椒油,撒上葱花即可。
