Steps to make 什锦炒猫耳朵

  • 1.买现成的猫耳朵,一平盘,根据人数,饭量增减,我的用量是大概4两左右。
  • 2.所需黄瓜,蒜薹3根,葱头1个,香菇3朵,五花肉1两,胡萝卜1根,葱两小段,蒜3瓣
  • 3.所有材料切成小丁,胡萝卜5/1根,黄瓜半条,葱头半头,配菜可以依据个人喜好增减。
  • 4.烧一锅水,多一点,开锅后放入猫耳朵,
  • 5.下锅后迅速用用笊篱滑动,以免粘锅,然后盖上锅盖
  • 6.开锅后掀开锅盖,加半小碗凉水,再次盖上锅盖,一般开锅三次,加三遍水就可以了,捞出一个猫耳朵尝尝没有硬心就熟了,不要煮太软,炒熟后口感很面不好吃了
  • 7.猫耳朵过凉水后控干水分,加入酱油,或者老抽,拌匀上色,加入一点盐,炒之前加酱油和盐是为了入味,炒的时候也避免粘锅
  • 8.起锅烧油,放入葱花和五花肉丁炒熟。
  • 9.把配菜的所有材料一起放入锅里大火炒熟,依次放入盐,鸡精,这时候不要放酱油,因为菜的颜色会不好看
  • 10.放入猫耳朵炒,炒匀以后再次少放一点盐,最后放入蒜末,关火出锅
