【湘菜】--冰糖湘莲
“冰糖湘莲”是湖南甜菜中的名肴。自西汉年间用白莲向汉高祖刘邦进贡,故湘莲又称贡莲,香莲主要产于洞庭湖区一带,湘潭为著名产区,市内以花石、中路铺两地所产最多,质量也最好,有红莲、白莲之分,其中白莲圆滚洁白,粉糯清香,位于全国之首。在挖掘湖南长沙马王堆墓时,发现候就食用过莲子。金代诗人张楫品尝“心清犹带小荷香”的新白莲后,曾发出“口腹累人良可笑,此身便欲老湖湘”的感叹。
此菜汤清,莲白透红,莲子粉糯,清香宜人,白莲浮于清汤之上,宛如珍珠浮于水中,是著名湘菜之一。

Steps to make 【湘菜】--冰糖湘莲

  • 1.先把莲子洗净。
  • 2.用水浸泡10分钟。
  • 3.银耳洗净,泡发备用。
  • 4.青豆洗净,放到热水中煮8分钟。
  • 5.把莲子、银耳放到锅中,加水煮软。
  • 6.盛到碗中,上锅蒸至软烂。
  • 7.桂元肉、枸杞用温水洗净,泡5分钟滗去水分。
  • 8.炒锅置中火,放入清水500克,再放入冰糖烧沸,待冰糖完全溶化,端锅离火。用筛子滤去糖渣,再将冰糖水倒回锅内。
  • 9.放入桂圆肉和枸杞。
  • 10.再放入青豆。
  • 11.大火煮开即可。
  • 12.将蒸熟的莲子滗去水,盛入大汤碗内,再将煮开的冰糖及配料一起倒入汤碗,莲子浮在上面即成。
