Steps to make 啫啫鸡煲

  • 1.准备一只上好的鸡,剁小块,花了80多文。
  • 2.调料都有盐,添加时注意量。
  • 3.按自己喜好加入。
  • 4.加入孜然粉。
  • 5.柱侯酱。
  • 6.都有盐分注意用量。
  • 7.最后再撒少许生粉拌匀锁住水分,保证鸡肉外焦里嫩。
  • 8.沙姜是这道菜一绝。
  • 9.辅料多准备一些,啫啫的特色。
  • 10.腌制半小时有多的鸡块,大火先煎至两面微黄。
  • 11.就这个样子,不要太老,等会还要焗的。
  • 12.另起砂锅放油稍微多点。
  • 13.把辅料放入砂锅小火炒出香味。
  • 14.香气扑鼻下去煎好的鸡块,有豆豉的可以加点。
  • 15.再淋上少许米酒,盖盖子大火焗8分钟,不要加水,过程中会听到啫啫声,辅料中的水分被激发,散出香味融入到鸡肉里。
  • 16.我喜欢加点酸菜来解腻。
  • 17.酸菜和蒜白先放入翻炒一分钟。
  • 18.蒜苗叶,香菜,葱段下去。
