山寨版美食-----海南鸡饭
说起海南鸡饭还是前几年去海南的时候知道的,感觉一路上都挂着文昌鸡的牌子,但奇怪的是,我们却没有去尝试一下。最近不知怎么回事,突然迷上了海南鸡饭,吃了两次后,还是想自己回家试一下。

再强调一下,这是山寨版啊山寨版,想象着做的,不要拿是否正宗来说事了,真的伤不起啊,鸡肉没有餐厅里的美味,不过也算不错,特别是用加了鸡油和鸡汤煮出来的米饭,颗颗晶莹,非常香哦。

正宗的海南鸡饭是要用文昌鸡来做的,但这个买不到,就用普通的三黄鸡也可以的,我今天用的这个鸡是在超市买的,当时是叫黑脚什么鸡,忘了。

    • 1.鸡清洗干净后,滤干水份,如果在腌制时还有水分,可以用厨房用纸将鸡的表面擦干。
    • 2.将鸡内外均匀地抹上盐和胡椒粉,将葱和姜片塞进鸡肚里,鸡表面再抹上一层油。
    • 3.将鸡放在大碗里,再铺上一些姜片,蒙上保鲜膜,入冰箱冷藏过夜,同时在冰箱里放一盆水冷藏备用,再冻一些冰块。
    • 4.鸡身上的肥油炼成油。
    • 5.炼好的鸡油备用。
    • 6.腌制好的鸡肉里放一小碗水,入蒸锅,水开后蒸20-25分钟。
    • 7.蒸好的鸡放入放了冰块的冰水里,冰镇30分钟。
    • 8.这是蒸鸡的鸡汤。
    • 9.锅里放一些鸡油,放入蒜茸炒香,再倒入清洁后的大米,翻炒均匀。
    • 10.倒入电饭煲,再倒入适量的鸡汤,加少量的盐,开始煮饭。
    • 11.冰镇好的鸡捞起,风干水份后,在鸡表面刷一层香油,切块。
    • 12.准备蘸料,将姜茸和蒜茸用热的花生油炒香,倒在小碗里,再加入盐和鸡精搅匀即可。
