大白菜猪肉炖粉条这道菜养活了几代人,至今也深深影响着我们,它的味道会永远留在记忆的味道中。这次我将猪五花肉换成猪肉渣,猪肉渣是用猪肥肉炼油后的剩余的油渣称之为猪肉渣,用猪肉渣炖出来的菜,白菜中含有肉香,猪肉渣经过汤汁的浸泡,汁多味香而且非常软嫩,再加上粉条的爽滑,让吃者满脸润红、满嘴留香。

  • 1.主料:大白菜半棵、猪肉渣50克、粉条50克副料:葱、姜、蒜、干红辣椒
  • 2.粉条用温水泡软
  • 3.大白菜改刀,白菜帮与白菜叶分开放置
  • 4.锅中加油,将葱、姜、蒜、干红辣椒入锅炒香
  • 5.佐料炒香后将猪肉渣放入锅中煸炒
  • 6.猪肉渣炒香后放入白菜帮煸炒
  • 7.滴入适量生抽继续炒制至到白菜帮变软
  • 8.冲入开水炖制
  • 9.将泡软的粉条放入锅中炖制
  • 10.加入适量的盐
  • 11.转中火炖制5分钟后,将剩余白菜叶放入锅中继续炖制
  • 12.炖制汤汁浓稠时即可
