云吞面
云吞面又称馄饨面、细蓉、大蓉。是广东省的汉族特色小吃,属于粤菜系。粤菜取百家之长,用料广博,选料珍奇,配料精巧,善于在模仿中创新。云吞面也是香港饮食文化中不可或缺的一部分。PS:用量为10以上的份量。

  • 猪肉500克
  • 香菇150克
  • 200克
  • 鸡蛋面10个
  • 4克
  • 酱油3ml
  • 10ml
  • 料酒2ml
  • 生姜2克
  • 鸡粉2克

Steps to make 云吞面

  • 1.面粉加适量清水揉成光滑的面团,静放20分钟;
  • 2.再次来回揉,然后分成小团;
  • 3.把小团擀薄,大小8*8cm的正方形面皮;
  • 4.猪肉洗净剁碎,香菇洗净切碎末,葱、生姜切碎,放盐、油、生姜、酱油、鸡粉、料酒一起拌均腌制5分钟;
  • 5. 把馅放入擀好的云吞皮中,收紧口即可;
  • 6.这是包好的云吞;
  • 7.一份量,一个鸡蛋面、八个云吞;PS:菜谱用量是10份以上;
  • 8. 清水煮沸,放入鸡蛋面煮六成熟,捞出沥干水;
  • 9.准备好的骨头汤,再次煮沸;
  • 10.放入包好的云吞,煮八成熟;
  • 11.加入煮沥干水的鸡蛋面,放盐、葱,煮熟即可
