田园时光:酸甜锅包肉
这是一道很爽气的具有西洋风味的东北菜,对它感兴趣最初是因为这个有趣的名字,上网一查原来:哈尔滨建埠之初,清末滨江道府招待西方领事,为了适合西方人喜欢酸甜的习惯,而将鲜咸口的东北焦烧肉片改良而成,取名“锅爆肉”,没想到此菜深受欢迎,西方人点菜总发不准音,时间一长,衍化成今天的“锅包肉”。这道菜属中等难度,要点在挂糊和回锅复炸,为了更加方便烹调,我使用了万用炸粉,这样只要炸一次,也没有了调炸粉的麻烦。酸甜酱除了使用番茄沙司以外,还用了多伦多市场随处可见的甜辣酱,口感很好。

Steps to make 田园时光:酸甜锅包肉

  • 1.豬里脊肉切片,放入盐、料酒、白胡椒粉,醃30分鐘。
  • 2.萬用炸粉倒入半杯水調成糊狀.
  • 3.將里脊肉掛上糊.
  • 4.鍋倒入菜油,燒至7成熟後,直接将肉片放入熱油裡炸至金黃色,撈起瀝乾。
  • 5.炒鍋燒熱,倒入番茄沙司和甜辣酱加半杯水,煮開並攪拌至濃稠。
  • 6.倒入炸好的里脊肉翻炒均勻,起鍋。
  • 7.酸甜适口,是宴请宾客的一道好菜,尤其受女士和孩子的喜欢。
