  • 桂花酱30g
  • 白糖20g

Steps to make 老北京桂花墩饽饽

  • 1.米酒中加160克水,用面粉和成稠糊,室温发酵至面糊完全发酵
  • 2.自己做的桂花酱加入
  • 3.再放些糖,搅拌均匀。
  • 4.把剩余的面粉加入,再加。入些酵母粉,搅拌成软硬合适的面团
  • 5.把面团放入面包机,加入点橄榄油让面团油润香甜
  • 6.用和面程序把面团和成光滑的面团。没有面包机就直接揉至光滑即可。
  • 7.室温发酵至2倍大小,戳一个洞不变形.面团中看到的一点点的就是桂花啦
  • 8.发酵好的面团排气,分剂后松弛15分钟
  • 9.然后成型为圆墩型,再继续饧发15分钟
  • 10.放入煎锅中,小火煎
  • 11.煎至两面金黄即可。
