广式月饼之 白云豆松仁牛肉粒
今年中秋很临近了,超市的月饼又贵又不实在,上个星期想做冰皮买了月饼模,今天也想试试做个广式的月饼 广式月饼饼皮已经没有什么可以变化的余地了,只有在内陷上有所突破了,这次用了白云豆里面加了松子仁,我用的是熟的,就不用再烘烤了,家里两个男人,大男人喜欢吃肉和咸的,小男人喜欢吃甜的,那我只好中和一下,又有甜又有咸,还有肉!

  • 中筋面粉100g
  • 转化糖浆75g
  • 牛肉粒100g
  • 枧水1g
  • 蛋黄1个
  • 花生油25g
  • 奶粉5g
  • 白云豆200g
  • 白砂糖200g
  • 花生油80g

Steps to make 广式月饼之 白云豆松仁牛肉粒

  • 1.准备好全部材料
  • 2.把转化糖浆倒入盆中,再放入花生油,枧水 用手动打蛋器搅拌均匀
  • 3.筛入面粉 奶粉
  • 4.用手揉成光滑的面团,盖上保鲜膜醒发2个小时
  • 5.按1:4或者3:7的比例把面团切成需要克数,我的是50g的模 我面皮用的是10g 馅料是40g
  • 6.把馅料平均分成40g一团
  • 7.把牛肉放入馅料内包裹好
  • 8.把冰皮压薄,把包好牛肉粒的馅料放进去
  • 9.用月饼模压制成自己喜欢的团
  • 10.放入烤箱,200°预热5分钟,再烤5分钟后拿出,刷上蛋黄液,进行最后15分钟的烘烤
