经典香橙磅蛋糕
磅蛋糕磅是一款非常基础,非常简单,非常经典的蛋糕。口感扎实,潤泽,奶香浓郁。 因为黄油和糖的分量不轻,所以加入了橙皮和橙汁的香橙磅蛋糕,解腻之余又加了几分清新,真是非常喜欢。 据说它源于18世纪的英国。当时的磅蛋糕只有四样等量的材料,一磅糖、一磅面粉、一磅鸡蛋、一磅黄油。因为每样材料各占1/4,所以传到法国,类似的蛋糕也叫四分之一蛋糕。

  • 黄油100克
  • 低粉140克
  • 糖粉90克
  • 鸡蛋100克
  • 橙皮一个
  • 橙汁40ml
  • 泡打粉2/3小勺
  • 白糖15克

Steps to make 经典香橙磅蛋糕

  • 1.橙子洗干净,磨出皮碎,加15克白糖,拌匀腌制30分钟。
  • 2.橙肉榨汁。
  • 3.软化的黄油稍微打匀,加糖粉打发白,蓬松。
  • 4.蛋液分三次加入,每次打匀后再加。
  • 5.打到顺滑,蓬松。
  • 6.再加入橙皮,拌匀。
  • 7.加入一半橙汁,拌匀。
  • 8.低粉和泡打粉拌匀后过筛,倒入一半,拌到无干粉。继续加入剩下的橙汁,低粉拌到无干粉。
  • 9.模具里放好油纸,倒入面糊,震两下,抹平,放入预热好的烤箱,170度40-45分钟。(我用的是雪芬模具,比较小,所以分成两个)
  • 10.烤好后取出侧放至室温,切片即可。
