Steps to make 茄子干

  • 1.挑选鲜嫩的茄子。
  • 2.去蒂,摘去尾部,清洗干净。
  • 3.将茄子切成滚刀块。
  • 4.切好的茄子块浸泡在清水中。
  • 5.锅里烧开水,将茄子块捞出倒进锅里焯水。
  • 6.盖上锅盖焖一下。
  • 7.用锅铲翻动,使茄子块完全变色。
  • 8.用漏勺捞出来沥干水分。
  • 9.水分沥干以后摊在筛子上晾凉。
  • 10.置太阳下暴晒。
  • 11.晒至全干,拨动会发出沙沙的声音,用手捏捏也可以判断。
  • 12.这是第一次蒸的茄子干,只在浸泡软以后,加了些青椒末、蒜末,色拉油、盐、料酒,蒸完拌一拌就成了。别看它黑乎乎的不起眼,光闻闻就满口生津了,吃上一口,真是难以言传的好味道啊!
