喜欢吃辣的朋友一定对水煮鱼不陌生,去川菜馆吃饭水煮鱼一般都会点,鱼肉很鲜美、麻辣味很厚重。

  • 1.准备材料。
  • 2.将草鱼杀好洗净去头去尾。
  • 3.留中段备用。
  • 4.用刀沿着鱼骨一侧,片出鱼肉,剃掉大刺。
  • 5.鱼肉切成蝴蝶片,就是一刀下去不切断,第二刀再切断。
  • 6.片好的鱼片中放盐反复搓洗干净,用清水多冲洗几遍。再用料酒、胡椒粉、蛋清、盐抓一下入味,再拌入淀粉备用。
  • 7.将香芹切段。
  • 8.将豆芽去根清洗干净。
  • 9.葱切末、姜切片。
  • 10.炒锅中加油小火爆香花椒、干辣椒。
  • 11.将花椒、干辣椒捞出切碎备用。
  • 12.用炸过花椒、干辣椒的油爆香葱、生姜。
  • 13.下入鱼排翻炒。加料酒、胡椒粉、白糖适量。
  • 14.然后加入热水大火烧开。
  • 15.下入豆芽、芹菜煮熟。
  • 16.豆芽、芹菜、鱼骨捞出放入大碗中。
  • 17.锅再次沸腾后,加入码好味的鱼片,煮2分钟。
  • 18.把烧滚的鱼汤、鱼片全部倒入已经码好豆芽、芹菜的大碗中。将步骤11中切碎的花椒、辣椒摆在上面。
  • 19.另起锅,锅中放油,小火爆香干辣椒。
  • 20.先将干辣椒捞出来放到碗上面。
  • 21.锅中的油继续加热,最后将烧热的油,迅速浇在鱼上。
