  • 干豆腐2张

  • 甜面酱3大匙
  • 一品鲜酱油1小匙
  • 老抽少许
  • 白糖1匙
  • 胡椒粉少许
  • 鸡精少许
  • 精盐少许

Steps to make 京酱肉丝

  • 1.食材集合。
  • 2.里脊肉切片再切成细条,加少许精盐,一品鲜酱油,胡椒粉抓拌至起粘,加一个蛋液继续抓拌均匀。
  • 3.加入玉米淀粉抓拌均匀。
  • 4.倒入适量食用油锁住水份。
  • 5.胡萝卜,黄瓜,葱白均切细丝。
  • 6.葱姜蒜切末。
  • 7.干豆腐用热水烫一下过凉,胡萝卜丝、黄瓜丝及葱丝和香菜分别码在干豆腐上。
  • 8.紧紧的卷起后,斜切成段。
  • 9.均匀的码在盘子的外圈。
  • 10.锅中加适量食用油,油温四成热时下入肉丝滑散,变白捞出。
  • 11.另起锅加油,下入葱姜蒜爆香。
  • 12.加入甜面酱煸炒。
  • 13.加一品鲜煸炒,炒出甜面酱和酱油的香味。
  • 14.加入一小碗清水,加入少许老抽提色,加白糖,鸡精炒匀。
  • 15.下入肉丝煸炒。
  • 16.最后加入水淀粉煸炒至肉酱汁浓稠。
  • 17.出锅盛入盘子中间。
  • 18.新春盛宴,团团圆圆。
