前几天去专门做肉丸的加工店做了一些肉丸,他们只负责加工,原料和配料都是自己亲自挑选的,尽管有些麻烦,选料、排队、买肉、临近传统节日,做肉丸的人太多,还要等上一个多小时才能做好,胜在食材新鲜,自己亲自监督制作过程,放心食用,猪皮不能做丸子,可是那么大块扔掉可惜,也浪费,拿回来放在冰箱里,这两天也想着怎么来烹调它比较合理,宝爸早上给我提议,焖排骨试试,事实证明,他是超级吃货哈哈~~

  • 猪皮300克
  • 大蒜5瓣
  • 生姜1块
  • 南乳1块
  • 蚝油1汤匙
  • 冰糖50克
  • 料酒2汤匙
  • 酱油2汤匙

Steps to make 猪皮烧排骨

  • 1.准备食材:猪皮、排骨
  • 2.刮掉附在猪皮上的油脂
  • 3.反过来再刮干净猪皮上的细毛
  • 4.烧开适量水,加上一汤匙盐、放入姜片,猪皮放入锅中煮10分钟左右
  • 5.捞起冲洗干净、切块,蒜瓣去皮,排骨洗净、斩小段
  • 6.热锅、下蒜瓣爆香
  • 7.倒入排骨煸炒片刻
  • 8.取出冰糖、南乳
  • 9.加入南乳继续翻炒
  • 10.倒进冰糖
  • 11.倒入酱油、蚝油、料酒翻炒上色
  • 12.加上猪皮翻炒均匀
  • 13.加上没过食材的清水
  • 14.遮上锅盖,大火煮开后调成中火焖35分钟左右
  • 15.焖至酱汁剩下少许,调入盐、鸡粉、翻炒均匀、起锅
