水煮鱼这道菜,在饭店里不是一般的火,我想很多的人都很喜欢吃水煮鱼,只要是喜欢吃辣的人,那香辣鲜美的味道很少有人会拒绝它的味道。但是我和一个川菜厨师朋友聊天得知,一份水煮鱼需要2-3斤的油,目前油这么贵,哪有全用新油的道理呀!很多的时候都很担心吃过的油在回锅,就是都是用新的油,你想那么多油,也是摄入超标的呀。现代生活好了,不但需要美味,更需要健康,所有怡汝这款【秘制新派水煮鱼】不但满足你喜欢香辣的口感,更能喝上一碗鲜美的汤,吃着香辣的鱼片,喝着鲜美的汤,我想这道菜家庭宴请的话,一定是个不错的菜,一定会赢得大家的眼球,也会满足大家爱吃水煮鱼的胃!

Steps to make 【怡汝私房宴请菜】新派水煮鱼

  • 1.新派水煮鱼食材---去鳞大头鱼尾。
  • 2.新派水煮鱼食材---黄豆芽。
  • 3.把鱼两面的肉片下来。
  • 4.把鱼骨剁成寸段用清水清洗一下,控干备用。
  • 5.把鱼肉片成0.4厘米的片。想要大点久切成双飞片,单片也行。
  • 6.切好的鱼片用清水清洗一下去掉血水。
  • 7.把鱼片放入黄酒或者料酒、少许生抽、味精、胡椒粉、姜、盐和水淀粉腌制一下。
  • 8.把干辣椒切成公分段、姜葱切片备用。麻椒没有了,我这里还有一些花生剩下的麻椒和辣椒一会也用了。
  • 9.干辣椒放入碗中。
  • 10.把豆芽用开水焯熟过凉水备用。
  • 11.锅凉油8成热放入鱼骨肉炸。
  • 12.把鱼骨炸至两面发黄捞出备用。
  • 13.水开后放入过油的鱼骨肉,葱姜煮。
  • 14.等汤成奶白色放入豆芽.
  • 15.开锅后放入盐、胡椒粉、鸡精调味出锅装汤碗。
  • 16.锅内放人开水,加入葱姜和黄酒或者料酒,下入腌制好的鱼片,一片一片的下,不要随意的搅动,避免碎了。
  • 17.完全开了,鱼片也就熟了,撇去浮沫。
  • 18.捞出鱼片装在鱼汤上。
  • 19.炒锅热锅凉油,6成热放入花椒、大料、香叶、桂皮、麻椒炸香捞出大料和桂皮和香叶。
  • 20.放入葱姜炸香停火。
  • 21.姜炸香停火,浇在干辣椒上即可。
  • 22.然后再把炸好的辣椒花椒油浇在鱼片上即可。
  • 23.一条鱼做了一大一小两份呢!
  • 24.做好的水煮鱼开吃。
