清口降火夏季菜——黄瓜拌鸡蛋
听说过黄瓜炒鸡蛋,但是黄瓜拌鸡蛋还是第一次听说,刚从网上看到了这种做法,正好家中有一根大黄瓜,也有鸡蛋,晚餐就做个黄瓜拌鸡蛋。
在黄瓜炒鸡蛋中,炒过的黄瓜失去了清脆清爽的口感,而黄瓜拌鸡蛋是一道凉菜,晾凉的鸡蛋,配上生的黄瓜,在夏季吃清爽又有营养。

Steps to make 清口降火夏季菜——黄瓜拌鸡蛋

  • 1.鸡蛋入半调羹料酒,半调羹水,数滴醋和适量盐,充分打散。(调入醋和水能让鸡蛋更加嫩,调入料酒可以去腥,但不可多加。)
  • 2.热锅冷油,倒入蛋液小火将鸡蛋滑炒至熟,盛出晾凉。(晾凉的鸡蛋和生的黄瓜在一起口感才好。)
  • 3.将黄瓜拍开,用手将黄瓜掰成小块。(如果用刀切成小块,横断面会比较齐,不入味,掰开则横断面不规则,入味会更充分。)
  • 4.蒜切细颗粒,香菜切寸段,一调羹味极鲜酱油、一调羹香醋,半调羹白糖,一调羹豆豉香辣酱调成料汁。(各种调料的比例可以根据自己的口味来调整,豆豉香辣酱也可以换成自己喜欢的其他香辣酱。)
  • 5.将黄瓜和晾凉的鸡蛋放入碗中,撒上蒜末和香菜。
  • 6.将料汁倒到黄瓜鸡蛋上,充分拌匀即可。
