配粥小菜---酱腌小黄瓜
这个酱黄瓜是我来昆山上班的时候,一个同事自己带菜吃,结果给我们分享了一下,特别好吃!当时觉得,这是我吃过最好吃的小黄瓜了!后来很期待她经常能带这个!可是我问她做法时候,她说是她奶奶做的,也说不出来什么重要的细节.......随着这些年的摸爬打滚,终于按照我自己的理解方式做了这个酱腌小黄瓜!哈哈...如果有不对的地方,欢迎指正啊!

    Steps to make 配粥小菜---酱腌小黄瓜

    • 1.小黄瓜买回来后,用洗米水洗第一遍。
    • 2.再用清水冲洗表面,放在大筛子上沥干水分备用。
    • 3.小黄瓜放入无水无油的干净的容器里,加入盐腌制24小时。
    • 4.上面最好压上重物,这样水份出来的就比较快。
    • 5.锅里烧一锅开水,倒入腌制好的小黄瓜快速翻烫5秒钟捞出。
    • 6.再次放入筛子里沥干并晒至1天,黄瓜颜色由绿色变为白色为好,记得要翻面哦。
    • 7.干净的锅里放入八角,花椒,香叶,姜片,冰糖。
    • 8.倒入适量老抽。
    • 9.再倒入适量金澜酱油。
    • 10.老抽和金澜酱油比例为:1:2。
    • 11.中小火慢慢的烧开至冰糖溶化即可。
    • 12.酱汁晾凉后放入无水无油的密封容器里。
    • 13.黄瓜晒至一天颜色会变成白色。
    • 14.将白色的黄瓜再次在开水锅里烫2秒钟捞出,沥干水分。
    • 15.将小黄瓜泡入酱汁里加点蒜瓣,密封冷藏3天就可以开吃啦!
