Steps to make 【四川】藤椒鱼

  • 1.武昌鱼处理干净,去头去尾,沿着背脊下刀,切成均匀的小段,注意肚子不要切断,链接尽量少一些,一汤匙料酒腌制半小时(鱼段尽量切小段一点,那样好摆盘)
  • 2.用大的盘子,盘底铺满葱丝,姜丝
  • 3.泡椒小米辣和小米辣切段加适量泡椒小米辣的酸水备用
  • 4.姜蒜切泥加适量凉白开,加适量盐鸡精搅拌均匀备用
  • 5.去掉头尾的鱼身体从一端开始摆成孔雀开屏形状,上热锅蒸两分钟后取出倒掉蒸出来的水
  • 6.加入姜蒜水和小米辣水上热锅再蒸十分钟出锅(可以用胡萝卜简单装饰一下,也可以自己创意,可有可无)
  • 7.出锅后加适量幺麻子藤椒油,适量葱花即可
