传统韩式土豆饼
小时候在路边的布帐马车(포장마차)吃土豆饼,一吃就是十几个。长大了会喝酒了,在布帐马车喝小酒,只要有土豆饼就不需要别的下酒菜了。

Steps to make 传统韩式土豆饼

  • 1.土豆洗净切好,放入搅拌机里。
  • 2.搅拌充分,要足够细腻。有心的同学可以手磨,我比较懒,直接上搅拌机了。
  • 3.分离水分,大概就这样放着2分钟左右就好了,不需要刻意按压。
  • 4.分离出来的水在碗里再放个2分钟,水就会逐渐变得清澈。这时候把水倒掉,可以看到下面沉淀出了纯天然的土豆淀粉。
  • 5.把淀粉加到我们的土豆粉里,再加小半勺盐,不要加多哦,咸了就没法吃了。
  • 6.锅里倒入适量的油,放好模具,小火加热30-60秒。油量非常重要,土豆饼比较吸油,油少了会干,但油太多又不会成型,变得黏糊糊,估计要做过几次了才能掌握好。最好用刷子在模具的内侧也刷一下油。
  • 7.把我们的土豆粉放进去,用中小火慢慢煎。
  • 8.煎的时候留意观察,大约周围越8mm左右有透明状的时候就差不多可以把模具拿开翻过来了。注意不要弄糊哦。如果油被吸没了要记得及时补充,但不要一下子加太多。两面都煎到金黄色之后盛出来。
  • 9.切点葱末准备做蘸料,喜欢吃辣的朋友也可以切点小辣椒。
  • 10.倒些海鲜酱油在小碟子里,放上我们的葱花和小辣椒,再加上适量味精,上菜了!
