Steps to make 酸菜鱼

  • 1.鲜鱼(我用的鲤鱼)分档取料。
  • 2.鱼肉片成片。
  • 3.加入盐,鸡精,料酒,白糖码味后,下入鸡蛋液,粉芡上浆。
  • 4.酸菜用水泡一下,切成寸段
  • 5.锅放火上,添入少许底油,五成油温时下入葱段,姜片炒出香味。
  • 6.放入鱼头鱼骨煸炒,兑入适量水,大火烧开制成鱼汤盛入容器内备用。
  • 7.锅放火上,添入适量油,三成油温时下入腌好的鱼片滑散,捞出沥净油。
  • 8.炒锅上火,加入少许底油,下入葱姜蒜末和郫县豆瓣酱炒出香味。
  • 9.放入酸菜炒透。
  • 10.兑入鱼汤大火烧开后加入盐,鸡精,白糖定好味。(盐酌情放,酸菜和豆瓣酱都有盐了)。
  • 11.下入鱼片烧开,盛入盆内。
  • 12.另起锅,添入少许油,下入干辣椒(干辣椒可提前用水泡一下,不容易糊),川花椒炒出香味。
  • 13.浇在菜上即可。
