小朱牌紫薯冰皮月饼

Steps to make 小朱牌紫薯冰皮月饼

  • 1.首先糯米粉与玉米淀粉大约2:1的比例加入容器中,然后加入一袋牛奶与适量白糖,搅拌均匀,没有干面(其实标准的冰皮月饼应该用糯米粉、粘米粉和澄粉
  • 2.紫薯去皮,切成块,另用一个小容器放入少量糯米面上面盖好保鲜膜(防止在月饼模子里粘连)与上步中的面糊一起放入锅中蒸30分钟左右
  • 3.紫薯捣成紫薯泥,个人觉得紫薯泥甜味已经够了,喜欢甜食的朋友可以按自己喜好加入糖
  • 4.蒸好的面团加入少量紫薯泥活匀,就成了紫色的面团,用它来做月饼皮
  • 5.将面团做成一个个的小剂子
  • 6.擀成薄皮,放入做好的紫薯泥但是不要太薄,不然用模子压出来容易露馅
  • 7.包好之后做成团子周围沾上之前蒸好的糯米面防止粘粘,放入月饼模子(其实这之前我是先按月饼模子大小测好最终成型的团子大小的,各位注意了
  • 8.月饼模子轻轻一压,做好的月饼就脱模成型了
  • 9.哈哈,外表艳丽,口感Q劲的冰皮月饼就出炉了
