培根芝士小餐包
新模具开光,自己创了一个方子,将培根放进去,做了这款小面包,味道很不错,而且很柔软。口味是偏咸的。

  • 新良焙食尚原味面包粉330克
  • 新良焙食尚原味蛋糕粉70克
  • 鸡蛋55克
  • 酵母4克
  • 白糖30克
  • 5克
  • 清水210克
  • 荷美尔精肉培根6条

Steps to make 培根芝士小餐包

  • 1.面包粉、蛋糕粉、酵母、白糖、盐、鸡蛋、清水放入面包桶内
  • 2.启动“和面”程序,待面团光滑时,放入软化的黄油
  • 3.继续揉面,能揉出透明的薄膜来,收圆,进行基础发酵。我用了柏翠IMIX两个程序,共40分钟,即可出手套膜
  • 4.待面团是原来的2.5倍时,用手指蘸面粉在顶部戳洞,不塌陷不回缩,发酵成功
  • 5.面团取出,置于案上,排气后分成12等份,分别揉圆,松弛10分钟
  • 6.荷美尔经典精肉培根从中间一分为二
  • 7.取其中一个小面团,擀成牛舌状,将培根摆在上面
  • 8.卷成卷,收口捏紧
  • 9.其它的小面团依次处理好,分别码放进模具中,蒙上保鲜膜,进行二次发酵
  • 10.待面团发至二倍大时,表面刷蛋液,撒上一层芝士粉,此时烤箱开始预热180度
  • 11.入预热好的烤箱中,180度,中层20分钟,上色后可盖一层锡纸防止颜色过重,如果喜欢色深皮厚的,可以省略盖锡纸
  • 12.出炉后,晾架上晾凉后食用
  • 13.组织很不错,带有培根的浓郁香气
  • 14.捏一捏,能很好的回弹
