  • 吉利丁片5克
  • 热牛奶40克
  • 抹茶粉4克
  • 淡奶油40克

Steps to make 抹茶酸奶慕斯蛋糕,咸香的芝士饼干,酸甜的酸奶、清新微苦的抹茶。

  • 1.饼干90克碾成粉末状,无盐黄油35克隔热水化成液体。
  • 2.把饼干粉末和黄油液混合均匀。
  • 3.放入模具的底部,压实后放入冰箱冷藏20分钟或者冷冻10分钟。
  • 4.吉利丁片5克放入冰水里软化后挤干水分,放入热牛奶40克里,搅拌至完全融化。
  • 5.再全部倒入原味酸奶170克里面。
  • 6.混合均匀备用。
  • 7.淡奶油200克加入糖粉25克,打发至6分发泡的流动状态。
  • 8.全部加入酸奶液里,混合均匀。
  • 9.把所有原料分成两份,一份1/3,一份2/3备用。
  • 10.抹茶粉4克加入淡奶油40克,混合均匀。
  • 11.把抹茶糊加入到2/3的奶油糊里,翻拌至颜色均匀。
  • 12.冰箱里取出饼干底已经定型的模具,倒入抹茶慕斯糊。
  • 13.放入冰箱冷冻10分钟定型。
  • 14.等抹茶糊表面定型后,倒入剩下的1/3原味面糊。
  • 15.放入冰箱继续冷冻10分钟定型。
  • 16.我们接着来准备抹茶淋面,把抹茶粉3克、糖粉10克混合均匀。
  • 17.再加入热牛奶30克、搅拌至抹茶完全融化。
  • 18.吉利丁片3克放入冰水里软化后挤干水分,放入热牛奶40克里。
  • 19.搅拌至完全融化。
  • 20.把两份液体混合均匀。
  • 21.过筛2遍,去掉气泡和没化开的抹茶,可以使表面更细腻。
  • 22.取出表面定型的慕斯,倒入准备好的抹茶淋面,放冰箱冷藏4-6个小时即可。
  • 23.用电吹风开热风,绕着边缘吹,帮助慕斯蛋糕脱模。
  • 24.轻轻提起模具脱模。
  • 25.抹茶酸奶慕斯蛋糕完成O(∩_∩)O。
  • 26.酸甜的酸奶、香浓的淡奶油、清新微苦的抹茶,清爽又清新。
  • 27.非常适合夏天做甜点,整体的味道清爽又清新。
