Steps to make 麻辣口水鸡

  • 1.葱、香菜一半切粒、一半卷成一小把;蒜切末;姜一半切末、一半切片;小米椒、青椒切圈。
  • 2.鸡腿洗净、去骨,凉水入锅,加入葱、姜、料酒、香叶、花椒、盐,大火煮开,撇去浮沫,转小火煮15分钟,关火,焖10分钟,用筷子戳一下鸡腿,能轻松穿透且没有血水渗出即熟了,出锅,放入凉开水(或冰水)中浸泡10分钟,锁住汁紧实肉。
  • 3.制作酱料。锅里放油,放入小米椒、青椒、蒜末、姜末、红油辣椒酱,快速翻炒几下,调入生抽、白糖、蚝油、花椒油、陈醋、芝麻酱,翻炒均匀,盛入碗里,放入葱花、香菜、熟芝麻、适量煮鸡腿的汤汁,拌匀。
  • 4.鸡腿切块、装盘。
  • 5.倒入酱料,撒上花生碎,增香添味。
