抹茶蜜红豆戚风
戚风蛋糕一直是家里备受欢迎的,加上了日本的抹茶的清香和蜜红豆淡淡的甜味,真是完美的口感。

  • 低筋面粉90克
  • 抹茶粉10克
  • 牛奶70克
  • 植物油40克
  • 蛋黄85克
  • 蛋白170克
  • 细砂糖85克
  • 柠檬汁几滴
  • 蜜红豆50克

Steps to make 抹茶蜜红豆戚风

  • 1.先将低筋面粉和抹茶粉过筛2遍,放入盆中
  • 2.再加入牛奶和植物油,搅拌均匀
  • 3.加入蛋黄,搅拌成均匀的蛋黄面糊
  • 4.加入蜜红豆,搅拌均匀(不要过度搅拌,以免起筋了)
  • 5.蛋白加柠檬汁几滴打至粗泡状,分三次加入细砂糖打至9分发,
  • 6.取1/3分量的蛋白霜加入到蛋黄糊中,轻轻搅拌均匀
  • 7.将蛋黄糊倒入剩余的蛋白霜内,用刮刀轻轻拌匀
  • 8.将搅拌均匀的蛋糕面糊从高处倒入模具中,轻震模具,震出大气泡
  • 9.放入预热好的烤箱,170度上下火35分钟,出炉后震几下,倒扣
  • 10.完全晾凉后脱模。
