  • 猪前蹄半个
  • 香叶几片
  • 八角2个
  • 桂皮2片
  • 沙姜1块

  • 蒜头1个

  • 酱油1000ml
  • 老抽2勺
  • 料酒2勺
  • 冰糖10g
  • 胡椒粉2匙
  • 鸡精少许

Steps to make 卤猪蹄

  • 1.猪前脚半个,店家老板已经将猪脚的骨头剁软,方便制好后切块 。
  • 2.水开后,猪脚入锅焯水 。
  • 3.两面焯至变色,煮出血沫 。
  • 4.用凉水中清洗干净 ,多洗几遍 。
  • 5.准备大料,详见辅料。这么配熬的卤汁特别香。
  • 6.将所有大料放入纱布袋内,系个结。
  • 7.锅中倒入水、酱油、老抽。
  • 8.将大料包、姜、蒜放入卤锅内。
  • 9.倒入料酒。
  • 10.放入黄冰糖,后面再加入胡椒粉。
  • 11.煮开后,熬20分钟,熬出香味。
  • 12.将猪蹄放入熬香的卤锅内。
  • 13.盖盖,中小火炖煮30~40分钟 。
  • 14.中间需开盖翻面 ,让两面渗透入味,卤到筷子直接可穿过肉块即熟了,放点鸡精调味后出锅 。
  • 15.盛出放凉。
  • 16.成品。切成小块后即可品尝,秋季贴膘怎能少它。
