肉酱卷饵块
饵块是云南特有的小吃之一,制作饵块的原料就是大米,只是需选取品质好、有香味、有黏性的大米。在旧时,舂饵块可是一景。春节前,先将泡过的米放到木甑里蒸,蒸到六七成熟时取出,就可以放进碓窝里舂了。待熟米舂打成面状后,就可以取出放到案板上搓揉,然后做成砖状,这就是饵块了。也有用木模压制成饼状的,木模上有喜字、寿字、福字、鱼、喜鹊等之类的图案,压制出的饵块饼也就有各种花样了。其实饵块和北方的年糕有点相像,只不过饵块是用普通大米制作,而年糕是用糯米制作。饵块可做成各种形状,除长丝叫饵丝外,其余不论饼形、卷形、块形都叫“饵块”。昆明有名的烧饵块就是用薄饼形的饵块在无烟炭火上烤到微焦黄时,在表面涂芝麻酱、辣酱、油辣椒、腌豆腐等,还可夹入牛、羊肉冷片或油条,味道都美味可口。

Steps to make 肉酱卷饵块

  • 1.炒锅上火,倒入适量食用油,煸香姜蒜末后放入肉沫煸炒。
  • 2.肉沫炒熟后放入面酱煸炒出香味。
  • 3.放入少许酱油、白糖、味精翻炒均匀后盛出备用。
  • 4.把饵块放入电饼铛里无油煎至微黄绵软。
  • 5.把煎软的饵块取出来,抹上一层炒好的肉酱。
  • 6.把饵块卷起来,切成小段即可食用,也可不切断直接拿着吃。
