Steps to make 广式柠檬伍仁月饼

  • 1.月饼皮:转换糖浆、花生油、枧水拌均。
  • 2.中筋面粉、奶粉过筛,加入拌均;
  • 3.揉成光滑团,保鲜膜包裹,静放1-2小时;
  • 4.分小16等分的小团;PS:不要再揉,直接分小团。
  • 5.月饼馅花生仁、瓜仁、腰果、核桃仁、白芝麻、黑芝麻分别烤熟斩碎,糖冬瓜、桔饼、咸柠檬切碎,加入一起拌均;
  • 6.细砂糖、盐、糕粉、冰肉、火腿、花生油、香油、水,加入一起拌均;
  • 7.揉成光滑馅团,保鲜膜包裹,静放1小时;
  • 8.分成16等分;
  • 9.月饼皮与月饼馅都做好;
  • 10.月饼皮用手压薄,呈锅状,放入月饼馅,用大拇指与食指之间揉,使得月饼皮均匀包裹月饼馅;
  • 11.包裹好月饼,放入月饼模型中,按压即可;PS:如果黏可以在月饼模型中撒一点糕粉。
  • 12.做的月饼放入烤盘,均匀喷上水;
  • 13.烤箱预热,180度,烤5分钟取出,涂上一层蛋黄液,继续烤15分钟。PS:烤好月饼,放凉,立刻用密封盒/密封袋装好,回油。3-5天是最好吃的时候。
