无油版的海棉纸杯蛋糕
玩烘焙的都会做海棉蛋糕和戚风蛋糕,这两款蛋糕可以说是入门级的,相对来讲,大家都说海棉蛋糕相对简单成功率高,一般都会从海棉蛋糕开始入手学,我是正好相反,初接触烘焙时不知道什么是海棉蛋糕和戚风蛋糕,就参考了一个方子开始烘焙之旅,经过几次的失败和成功后才发现原来做的就是戚风蛋糕。
戚风蛋糕做熟练后,尝试着做海棉蛋糕,发现烤出来后口感与戚风完全没法比,相对来讲更加喜欢吃戚风蛋糕,同时,几次出炉的海棉蛋糕都会回缩,严重打击继续尝试的积极性,自此之后N久没再尝试海棉蛋糕。
上周周末打算带小朋友出去户外运动,提前准备点零食,突然想起给他做几个纸杯海棉蛋糕,就这样又开始尝试做海棉蛋糕。

  • 土鸡蛋4个
  • 低筋面粉60g
  • 玉米淀粉20g
  • 白砂糖60g
  • 牛奶30g
  • 柠檬汁几滴

Steps to make 无油版的海棉纸杯蛋糕

  • 1.将打碎后的鸡蛋和白糖装入干净的盆中,加入几滴柠檬汁,用打蛋器搅打,打发至提起打蛋器,蛋糊留下的痕迹不会马上消失
  • 2.将低筋面粉和玉米淀粉过筛加入蛋糕糊中,用刮刀切拌均匀
  • 3.加入牛奶,用刮刀切拌均匀
  • 4.将拌好的蛋糕糊用勺子装入纸杯模具中
  • 5.烤箱160度预热10分钟左右,放入装有纸杯蛋糕糊的烤盘,中上层烤20分钟左右
