这个面包真的很神奇,最初是在空心菜的博客上面看到的,竟然有这么多的水分,那到最后不就成了烤麸了么,一般高筋粉吸水都是60-70,这个水分竟然有80以上~抱着试试看的态度自己也做了一遍,真的能做出来,而且真的就像烤麸一样弹弹弹~
ps,我估计原理其实和烤麸是一样的……

  • 高筋粉240g
  • 低筋粉60g
  • 195g
  • 牛奶60g
  • 奶粉15g
  • 12g
  • 食盐6g
  • 酵母3g
  • 黄油18g

Steps to make 弹弹吐司

  • 1.把除了黄油和酵母之外的所有原料放到面包机桶里面
  • 2.然后用筷子搅拌搅拌所有的原料都湿润了即可,这时候是一大堆稠面糊
  • 3.放到一边静置半个小时,然后用筷子试试已经有了像模像样的面筋了
  • 4.然后加进去酵母粉,开始和面
  • 5.面包机打开一个甜面包程序
  • 6.然后神奇的现象就出现啦~面团会越来越听话,慢慢的开始成团,这时候加进去黄油
  • 7.然后就成一个光滑的面团啦~把搅拌刀取出来,继续完整个甜面包程序即可!
