荷叶糯米鸡
荷叶糯米鸡是广东的一道名小吃,自从爱上美食之后我就想把广州的小吃都做一遍,不管是否正宗,只要我努力了,我就没有白来广州一回。这道菜没有加过多的调料,只是食物的原味——纯朴的味道,回归大自然,才是真正意义上的健康。

  • 瑶柱10颗
  • 香菇10个
  • 火腿1小块
  • 糯米300g
  • 白糖1小勺
  • 香叶2片
  • 蚝油1小勺
  • 酱油2大勺
  • 少许
  • 料酒1小勺

Steps to make 荷叶糯米鸡

  • 1.鸡切小块浸泡半小时,洗净控干水分,加少许盐、料酒、酱油、蚝油、白糖、香叶拌匀,入冰箱冷藏一夜;
  • 2.糯米洗净加冷水浸泡一夜;
  • 3.荷叶洗净加冷水浸泡一夜;
  • 4.火腿切粒,用温水浸泡瑶柱、大枣、香菇、火腿粒至少半小时;
  • 5.香菇切粒,瑶柱撕碎,和火腿粒、大枣一同加入泡好的糯米里,加1勺酱油、1勺猪油搅拌均匀,瑶柱和火腿粒都有咸味,米里不用加盐,加适量泡瑶柱的水,水不要太多,和米持平就可以了;
  • 6.倒入铸铁锅里,小火焖半小时;
  • 7.饭熟后翻拌几下,使饭更蓬松;
  • 8.取一张洗净的荷叶,放一些鸡肉;
  • 9.鸡肉上铺一层熟饭;
  • 10.再加一层鸡肉和香菇粒;
  • 11.包紧,水开后入锅中小火蒸30分钟左右;
  • 12.出锅撒上小葱碎,米香、肉香、荷叶香!
  • 13.成品图,一道菜吃出了多重口味!
