猪蹄是人们喜欢食用的营养佳品,身价不菲的熊掌常常让我们普通的消费者望其兴叹,廉价的猪蹄却是我们所熟悉的日常美食。而人们却常常对廉价的猪蹄不屑一顾,其实猪蹄的营养价值并不亚于熊掌。 中医认为,猪蹄性平,味甘咸,补虚弱,填肾精。

    花生长于滋养补益,有助于延年益寿民间又称“长生果”,猪蹄富含胶原蛋白,把这两种食材搭配起来做菜:补气养血,美容除皱。花生猪蹄因补气养血煲成汤很是适合老人儿童食用,特别适合新妈妈用来做滋补用。

    今天做的花生猪蹄不是汤煲,是一个简单的家常菜;把冰糖炒成糖稀用来给猪蹄上色,把猪蹄和花生米一起细火慢炖直至汤浓的一个家常菜。这个菜汤汁粘稠香甜,猪蹄软糯,花生香糯。
    如果喜欢酸甜的口感可以加入几汤匙番茄酱或炖制时候放入一些西红柿块,这样炖出的花生猪蹄就是酸甜的味道了,也就更能讨家人的喜爱了。

    Steps to make 花生猪蹄

    • 1.花生提前洗净泡好(约2小时),香菇用清水洗净泡好生猪蹄洗净后,用刀顺中间劈开。
    • 2.猪蹄前段很容易劈开,后端有一大骨头,劈时要用力。
    • 3.把劈开的猪蹄用刀斩成大段。
    • 4.大火煮开,煮5分钟后捞出猪蹄段,晾凉后用清水洗净备用。
    • 5.冰糖用刀面研碎。
    • 6.锅里倒入适量植物油,倒入冰糖末小火炒制,炒成颜色金黄的糖稀。
    • 7.倒入清洗后的猪蹄段,小火翻炒。
    • 8.翻炒至每块猪蹄都沾满糖稀。

    • 10.往锅里倒入足够的清水。
    • 11.大火煮开后把猪蹄连汤带水倒进砂锅。放进几块生姜、几朵泡好的香菇,大火煮开后改小火。
    • 12.小火煮30分钟后倒入提前泡好的花生,继续用小火煮1小时。
    • 13.调入适量精盐,煮5分钟即可关火。
