  • 酱油2茶匙
  • 蚝油1茶匙

Steps to make 虎皮凤爪

  • 1.备好鸡爪一份。
  • 2.将鸡爪剪洗好备用。
  • 3.锅里加水将鸡爪下锅煮制五分钟左右。
  • 4.煮好后将鸡爪控水放在蒸格上放凉。
  • 5.再将一个醋蜂蜜汁。
  • 6.将蜂蜜汁刷在鸡爪表面,刷均匀一点炸制会上色会更美。
  • 7.锅里加油,将刷汁晾干的鸡爪入锅。
  • 8.炸制外表焦黄微干。
  • 9.将炸好的鸡爪控油入大碗里。
  • 10.再加入清水或是冰水制制一小时以上。时间越久泡发的状态越好。
  • 11.如图是泡制了三小时的鸡爪。
  • 12.用香菇酱,酱油,蚝油,细盐主,香葱调味。
  • 13.再入蒸锅蒸制四十分钟。
  • 14.蒸好后夹出葱段,再加入枸杞点缀,继续蒸五分钟即可。
  • 15.这样了一份酱汁味浓郁的虎皮鸡爪就完成了。
