【不加一滴酱油,炒出漂亮光泽】 毛氏红烧肉
红烧肉是湖南地方名菜,毛主席爱吃这道菜肴,湖南韶山人称它为毛家红烧肉。

如今大街小巷的湘菜馆里边都会看到这道招牌菜:毛氏红烧肉,原本家喻户晓的红烧肉在主席菜这个神秘背景的烘托下显得尤其有分量,听说过的,陌生的“饕客”们,相信都不会放过这道味美佳肴。

  • 白糖50g

  • 料酒10g

Steps to make 【不加一滴酱油,炒出漂亮光泽】 毛氏红烧肉

  • 1.准备好材料。
  • 2.五花肉洗净后切块。
  • 3.切好葱段,姜片,蒜末;干辣椒,八角,香叶洗净。
  • 4.白糖50g,热水100g.
  • 5.锅内倒少许油,把五花肉放入煎。
  • 6.煎至表皮变黄乘出。(会有很多油煎出来,这样吃着也不会觉得腻。)
  • 7.把白糖全部放入锅内,加入30g 的热水,开小火。
  • 8.用铲子不停搅拌至白糖熔化。
  • 9.白糖变成大泡泡的时候,再加入30g热水,继续小火搅拌。
  • 10.等到白糖变成淡淡的焦黄色后,把剩余的热水全部倒入锅内,关火,用铲子搅拌均匀,倒出。
  • 11.锅内,倒少许油,把葱断,姜片,蒜末,八角,香叶,干辣椒全部放入锅内炒香。
  • 12.炒香后把煎好的五花肉放入锅内翻炒下后,加入料酒10g,炒匀。
  • 13.把炒好的糖色倒入锅内,使糖色均匀地包裹着肉块。
  • 14.倒入热水,没过肉块。
  • 15.盖上盖,大火烧开后转中小火慢煨40分钟左右。(中途记得开盖翻炒均匀)
  • 16.最后等汤汁剩余1/3的时候,加入盐2g,开大火收汁即可。看,没加一滴酱油,成品却是如此的诱人。
  • 17.在炒糖色的时候要有耐心,一定要用小火炒至,糊了就会发苦的。
  • 18.第15步骤中烧煮的具体时间视肉量而定。
