私房板栗烧鸡
板栗烧鸡:中秋刚过,这国庆节马上就接踵而来, 在我的印象中, 中秋、国庆总是紧挨着,而这两个节日最时令、最传统的宴客菜就莫属于它了, 大家猜猜, 是什么?大家肯定会异口同声地回答:“板栗烧鸡”。


当秋天的风刚刚吹起,空气中总是弥漫着甜甜的栗子清香,九月,新鲜的板栗就开始大量上市了。板栗不仅含有大量淀粉,而且含有蛋白质,维生素等多种招牌营养素,素有“干果之王”的美称。中医认为,栗子具有健脾胃、益气、补肾、强心的功用,是一种价廉物美、富有营养的滋补品及补养的良药。

“板栗烧鸡”作为传统的补益食品,板栗营养丰富,芳香浓郁,软糯香甜,它与鸡肉可谓是最佳搭档,同烹后,菜品色泽红亮、味咸鲜醇正,香中带甜、甜中带鲜、风味极佳,是一款不可多得的美味佳肴。

在刚过去的中秋家宴上,我就上道“私房板栗烧鸡”来招待客人,既然说是私房菜, 当然有我的绝招:

绝招一 煎鸡肉。因为鸡肉本身所含油脂很高,先将鸡肉煎一下,煎到鸡肉微微发黄,不仅能将油脂煎出,而且煎过的鸡肉更容易入味;记得鸡肉煎出来的油大部分要倒出来不用,这样做更健康;;
绝招二 用少许油煸香大料, 这样更能激发调味料的香味, 当然为了不影响菜品的整洁,在煮制过程中将它全部放入调味料钢球中,即可将味道煮融入菜中, 又能煮好后方便拿出;
绝招三 煮制时加入番茄酱, 这创意的调味料让鸡肉与板栗更惹味,不用担心会酸,番茄酱放入能中和了酱油的咸,让口感更好,并且颜色特别温和诱人;同时放入点冰糖让鸡肉的色泽更亮;

简单的三点,做出不一样的滋味双节传统宴客菜, 也让我们节日餐桌更亮丽出彩。

Steps to make 私房板栗烧鸡

  • 1.三黄鸡切成块后凉水下锅,煮开后捞出洗净控干备用;
  • 2. 锅中放入适量的油, 下入焯过水的鸡肉煸炒;
  • 3.将鸡中的水分煸干,表面微微发黄, 连同煸炒出来的油和鸡肉一起盛出备用;
  • 4.剩余些底油,下入姜片、花椒、八角油等煸炒;
  • 5.煸炒出香味后捞出放入调料钢球中;
  • 6.煸炒过大料的油下入番茄酱一起翻炒;
  • 7.再加入适量的开水、生抽和冰糖一起煮开;
  • 8.下入煸炒过的鸡肉(记得不要将油脂倒入);
  • 9.再放入板栗和调味料钢球,(如果汤汁没有淹没过原料可以适量加点开水);
  • 10.大火烧开小火焖20分钟后放入大蒜, 再依据个人口味加入盐等调味;
  • 11.拿出调味料钢球, 翻炒均匀, 大火收汁即可;
  • 12.盛入碗中, 摆上小葱装饰。
