提拉米苏(Tiramisu)是意大利的甜点经典,据说吃了美味的提拉米苏之后,会幸福得飘飘然、宛如登上仙境。在恋爱行星里,那个渴望爱情的女孩将Tiramisu称为“爱情的滋味”,不厌其烦地细细打着蛋,轻轻搅拌着起司,最后在十几个小时的冰冻酝酿后才小心翼翼地品尝着这希望与甜蜜交织的爱情的味道。

  • 马斯卡彭芝士250g
  • 动物性淡奶油150g
  • 吉利丁片2片,10g
  • 咖啡酒30g
  • 蛋黄2个
  • 75g
  • 细砂糖75g
  • 可可戚风蛋糕2片

Steps to make 提拉米苏蛋糕#优阳烘焙#

  • 1.把材料准备好,用冷水把吉利丁片泡软,备用
  • 2.将蛋黄打发到浓稠,颜色变淡状态备用
  • 3.水、细砂糖一起倒入锅里加热煮沸成糖水后关火,一边用打蛋器搅打糖水(降低温度),一边加入打发好的蛋黄。蛋黄倒完后继续用打蛋器搅打5-10分钟左右。搅拌好的蛋黄混合液放一边备用。
  • 4.把马斯卡彭芝士放在一个容器里,用打蛋器搅打到顺滑。
  • 5.加入蛋黄混合液,搅拌至没有颗粒。
  • 6.把泡软的吉利丁片滤干水分,隔水加热至彻底溶化成为吉利丁溶液
  • 7.把吉利丁溶液倒入之前混合好的芝士糊里,拌匀均匀
  • 8.把动物性淡奶油打发到软性发泡(刚刚出现纹路)
  • 9.把打发好的淡奶油加入芝士糊里搅拌均匀。
  • 10.放一片蛋糕片在慕斯膜底并涂上咖啡酒。(因为我错手把两片蛋糕都切了边边,你们做的时候可以只切放中间那一片,不切也可以。)
  • 11.倒入一半的芝士糊,放入冷藏20分钟。
  • 12.在芝士糊上继续铺一层蘸了咖啡酒的蛋糕,并倒入剩下一半芝士糊
  • 13.把蛋糕模放进冰箱冷藏4个小时左右
  • 14.芝士糊彻底凝固以后,用热毛巾围在蛋糕模外,20秒左右就可以轻松脱模,或者用吹风机稍稍在蛋糕模外壁吹一下。
  • 15.在表面撒上可可粉和糖粉做装饰,巧克力装入一次性裱花袋隔水融化,剪一个小洞挤在蛋糕边缘即可
