腊鱼和腊肉一样,是湖南人家家都会做的腊味,在湖南的饮食文化中有着重要地位。腊鱼是将鱼洗净腌制晒干以后,进行烟熏,风味独特,耐贮藏。腊鱼肉质细嫩,味道鲜美,营养价值很高。腊鱼的做法一般为蒸和炒,此处介绍的是剁椒炒腊鱼。

Steps to make 剁椒炒腊鱼

  • 1.因为腊鱼通常都比较咸,所以需要进行凉水侵泡或者热水煮一下。此处选择将腊鱼用凉水侵泡1小时,然后将腊鱼切成条;
  • 2.大蒜切片,生姜切丝,大蒜叶切断,豆豉用水泡2分钟,洗净待用;
  • 3.将锅烧热,倒入食用油,待油热之后,将腊鱼放入锅中煎炸,待一面煎黄以后翻到另外一边也煎黄;
  • 4.将腊鱼拨到一边,放入生姜,大蒜爆炒约1分钟;
  • 5.放入剁椒,豆豉,倒入凉水进行烧煮约5分钟;
  • 6.起锅前,放入大蒜叶翻炒30秒,淋上生抽即可;
