麻婆豆腐
麻婆豆腐几乎是每家菜馆都会有的菜,但是感觉那么简单的菜,能炒好吃的却不多。在外面偶尔能吃到好吃的,确实次数很少。

Steps to make 麻婆豆腐

  • 1.豆腐3块。
  • 2.切成1*1的小方块。
  • 3.姜切成沫。
  • 4.蒜切成沫。
  • 5.香葱切成沫(葱白部分和葱绿部分分开放)
  • 6.香葱葱绿部分。
  • 7.调料汁:料酒半勺,生抽2勺,老抽半勺,白糖少许,水少许。
  • 8.用盐水稍微焯一下水,这样能去除豆腥味,还能让豆腐不容易炒碎。
  • 9.锅内放油,烧热。
  • 10.放葱姜蒜沫到锅内炒香。
  • 11.再放如豆瓣酱,炒出红色。
  • 12.放入豆腐炒均。
  • 13.再放入调味汁。
  • 14.放入肉末(我这个肉末是提前炒熟的,所以现在放,如果没炒熟的在放入豆瓣酱炒出红色后那一步就可放入肉末)关小火闷5分钟。
  • 15.放入葱绿部分。
  • 16.用大火收汁,放入花椒粉,盐和勾芡即可。
  • 17.喜欢吃辣点的,可以在放豆瓣酱这一步再加放点辣椒面或者辣椒油。
