Steps to make 油焖春笋—春天不可错过的应季菜

  • 1.春笋剥去外边的老叶,清洗干净。
  • 2.竖着切成细长条,做盐开水焯10分钟。
  • 3.焯完捞出在冷水中浸泡半小时备用。
  • 4.炒锅放油烧至7成热,将焯好的笋条过油滑2分钟,捞出。
  • 5.再用姜片和八角爆锅,
  • 6.倒入春笋条翻炒,加入少量清水,关小火盖盖焖煮约3分钟,开盖翻炒再次焖煮3分钟。
  • 7.待笋条外表呈黄色后加黄酒少许。
  • 8.加生抽、老抽。
  • 9.加盐和白糖。
  • 10.略微加些水,加盖焖约3分钟。
  • 11.开盖,中火收汁撒点青蒜末,即可出锅,成品图。
