南京盐水鸭
在南京想吃盐水鸭,或买盐水鸭那真叫方便实惠啊,大部分鸭子作坊的价格为:12元左右 / 斤,有名作坊价格要贵很多,约一倍左右,在22~24元左右 / 斤,且都是等这些名作坊的鸭子店,把鸭子全部卖完后,才会轮到便宜的作坊有生意的哟~~~
南京水西门自古就是做“盐水鸭”最有名的地方,每天都有很多市民开车、坐车慕名到这里的名店作坊来买:“盐水鸭”或“烤鸭”及“其它鸭制品:四件、鸭胗”等等带回去;因此,我家附近有很多的鸭子店和有名鸭子作坊,味道和价格随你自己喜欢去尽情挑选;所以,一般南京人想吃鸭子,就会到楼下的鸭子店,斩上半只鸭子回来,却极少有人,自己在家做“盐水鸭”呢~~~
我家也不例外,只是偶尔会卤几个盐水鸭腿而已。我利用周末时间在家做了一回“盐水鸭腿”,虽和正宗的“南京盐水鸭”稍有差别,但考虑到家庭学做,这样更方便些;自我感觉味道不比外面卖的差,且也是皮白肉红骨头绿~`~

  • 味精少许
  • 食盐20克
  • 姜片2克
  • 桂皮2小片

Steps to make 南京盐水鸭

  • 1.准备好鸭腿和相关作料
  • 2.取一大盆:将鸭腿摆上,再将主料里的所有配料倒入,用手,给鸭腿按摩,使作料均匀涂抹在鸭腿上
  • 3.放冰箱腌制4小时以上,中途最好多翻面几次,入味更好
  • 4.取出腌好的鸭腿,至通风处微微晾干
  • 5.锅中倒入适量清水:将上述辅料的配方放入,盖大火烧开
  • 6.放入已晾干的腌鸭腿,水量盖过鸭腿,加盖大火
  • 7.煮开后,转小火捂35分钟左右
  • 8.然后用筷子戳下,能戳动就行
  • 9.撒少许味精,关火
  • 10.加盖泡一夜(也可立即食用)
  • 11.取出沥干,后切大块
  • 12. 装盘
