东坡肉
东坡肉是杭州名菜,用猪肉炖制而成。其色、香、味俱佳,深受人们喜爱。慢火,少水,多酒,是制作这道菜的诀窍。
一般是一块约二寸许的方正形猪肉,一半为肥肉,一半为瘦肉,入口香糯、肥而不腻,带有酒香,色泽红亮,味醇汁浓,酥烂而形不碎,十分美味。

  • 绍兴黄酒500克
  • 生姜50克
  • 生抽100克
  • 老抽20克

Steps to make 东坡肉

  • 1.准备材料。
  • 2.将猪五花肉刮洗干净,切成正方形的肉块。
  • 3.放入清水锅内,用大火煮5分钟。
  • 4.捞出五花肉用清水漂洗干净。
  • 5.取一只砂锅,铺上葱、姜,垫底。
  • 6.将猪肉皮面朝下整齐地排在上面。
  • 7.加入生抽、老抽。
  • 8.加入黄酒,酒的高度以淹没过肉即可。
  • 9.加入冰糖。
  • 10.大火烧开转小火,炖至2小时左右时,微火焖酥。
  • 11.将肉捞起盛装碗里,皮朝上,加盖密封,上笼用大火蒸30分钟。取出蒸好的东坡肉,浇上煮肉的原汁就可以了。
