夏天来了,吃凉面的季节来了。老公是吉林人,非常非常喜欢吃冷面,所以每年夏季我都会做一些辣白菜。老公甚至会把它当做早餐的咸菜来吃。今年已经做过一次了,做完后送给同事一些,老公极不高兴地说,你就给我剩那么点儿哪够我吃啊?果然,没几天做的那些就被老公给吃光光了。这次我打算用另一个方子来做,看看哪个方子做出来更好吃。

  • 白萝卜1个

  • 160g
  • 葱头半个
  • 大蒜5瓣
  • 鱼露50ml
  • 虾皮30g
  • 1小块儿
  • 辣椒面120g
  • 韩式辣椒酱30g
  • 糯米粉50g

Steps to make 辣白菜

  • 1.大白菜一颗清洗干净
  • 2.把大白菜对切成四瓣,把80克盐均匀地涂匀在大白菜根部
  • 3.盆里放水,溶解另外的80克盐,涂好盐的大白菜浸入盆中
  • 4.用袋子把盆套上,在上面压重物,不要让大白菜浮起来,室温腌制10小时
  • 5.取出腌好的大白菜冲洗干净,挤干水分备用
  • 6.50g糯米粉加500g水(1:10)拌匀,然后小火加热,边煮边搅拌;煮至浆糊般比较黏稠的状态关火,晾凉至完全冷却备用。
  • 7.白萝卜擦丝,加入10克盐腌10分钟左右,冲洗干净并挤干水份备用
  • 8.苹果、梨、葱头、姜切成小块儿,一点小葱拍拍切成小段
  • 9.把切成小块儿的材料用料理机打成泥,放进萝卜丝里
  • 10.把晾凉的糯米糊倒进萝卜丝里拌匀
  • 11.韩式辣椒面、鱼露和韩式辣椒酱
  • 12.加入鱼露、辣椒面、辣椒酱、虾皮拌匀
  • 13.再加入小葱段儿搅拌成均匀的辣椒糊
  • 14.把辣椒酱一层层涂摸在大白菜上
  • 15.涂好的大白菜放进大一点的保鲜盒里密封,夏季室温放置1天,冬天2-3天后,再放冰箱冷藏7天左右即可食用。
