我学松鼠鱼是因为女儿,女儿三岁那年我们带她去大清花吃松鼠鱼,回家后电视碰巧也在演松鼠鱼的做法,女儿问我说你会做松鼠鱼吗?我说不会,女儿说你怎么那么笨呢?我当时郁闷好长时间呢,下决心一定要学会做松鼠鱼

Steps to make 松鼠鱼

  • 1.鱼洗净去掉鱼肚中的内脏以及肚中的黑膜(去腥)。切掉鱼头和鱼尾。把鱼顺着鱼骨片开,片鱼片的时候慢点,要把鱼刺也片掉。片鱼肉的时候要均等片开片成两片鱼肉片。如图
  • 2.在鱼身上斜切45度,深度要均匀,达到与厚度的2/3,不要断掉。翻过来90度再切45度斜刀。
  • 3.鱼肉用姜和料酒去腥腌制15分钟,然后用生粉拍均匀。
  • 4.锅内放油加热,等油温升高后,左手拿住一片鱼的尾部,卷成卷状,勺子挖热油淋在鱼肉身上,让鱼片定型。
  • 5.然后放在油锅内炸制,到表面微金黄色。注意一定要用勺子浇热油在鱼肉上,让它均匀受热。炸鱼的时候不能来回翻动鱼肉,防止散掉。
  • 6.等表面炸制微黄色时捞出控油,摆放在鱼盘中。另一片鱼肉也是这样炸,然后并排摆在鱼盘中。把鱼头和鱼尾排上生粉,炸制微黄色,摆在鱼盘的两端。一个完整的鱼身就做好了。
  • 7.锅内剩底油烧热,放入姜丝、蒜末爆香,放入料酒、生抽、番茄酱、青辣椒、红辣椒炒香变浓稠后,浇在鱼身上,表面撒少许白芝麻
  • 8.尽量让汤汁多一些
  • 9.做好的松鼠鱼
